Drying Dough

Customer makes frozen pizza. When they run the dough through the flattening rolls they use flour to prevent the dough from sticking to the rolls. They wanted to reduce their consumption of flour. Using a Model 110024 24" (610mm) Aluminum Super Air Knife to blow air over the surface, they were able dry it sufficiently so as it would not stick to the rolls. This eliminated the use of flour providing a cost savings.
