Keeping Smoke Contained On A Turkey Browning Oven
A lunchmeat manufacturer runs turkey breast through a browning oven. The oven, at 600°F, creates smoke that can escape and create unpleasant working conditions. The vent fan on the oven will carry away the smoke but also removes a great deal of heat from the process.
